Cooking if you have allergies

Late last year I saw a naturopath for an allergic reaction. The particular allergy can be caused by foods generating a high histamine level in the body. The naturopath gave me a list of foods that when eaten over time would assist to reduce the histamine level in the body. As well she gave me a list of foods not to eat as they can cause the opposite effect. Anyway, I found that it was difficult to work out what to make for breakfast, lunch and tea on an ongoing basis. It was fine for a few days, as it’s something new, however after a week of the same meals in a row it quickly becomes a challenge. So, I really wanted more idea of what to cook and lots of different recipes. I must say at this stage, that when I talk about ‘what to cook’, at the time I was thinking my partner would do most of the cooking as she always has. On asking others about what to cook with these sorts of foods, I was referred to two books, (by my sister actually) that are put out by the Royal Prince Alfred Hospital Allergy Unit in Sydney Australia. The two books are called, - RPAH Elimination Diet Handbook (with food and shopping guide) and - Friendly Food (The essential guide to avoiding allergies, additives and problem chemicals). The books are available online from their website store. So I purchased these books, not fully knowing what I was going to get, however knowing that it might at least give me a few ideas and keep my tummy from rumbling for a few weeks. Well, on receiving the books I found firstly the Elimination Diet Handbook so useful. It goes into food intolerances and allergies in quite a bit of detail. It explains the different types, what causes them and so for anyone interested in more information it is really useful. It goes into how to follow an Elimination diet, gives you a food diary and best of all for me, Food Chemical Charts AND a Shopping guide showing what foods are low, moderate, high and very high in chemicals for almost every different food group and therefore what to buy for a low chemical diet. There’s a menu planner and it even covers supplements and so much more. As if this wasn’t good enough the Friendly Food book is full of low chemical food recipes! I was inspired and since that day have set about doing a huge amount of the cooking at home now. For a while there I was cooking probably 90% of the meals and now it’s evened out to about 50/50 with my wife which is great. I’ve discovered cooking! :) One of the highlights was when I first made butterscotch pudding and the looks on the faces of my wife and kids were priceless. My wife was astounded that I could make something that tasted so good – her words. I was astounded too! It was super yum! The other highlight was when I first baked scones. I just had to call my mum to let her know that her son had baked! Yes, I found that I really enjoy cooking as it can be such a peaceful and meditative activity and has the ability to put big smiles on people’s faces! Whilst I’m late to this whole cooking thing – I’m enjoying being here now.

Shock and Horror, allergic to food! would have been my first reaction, but obviously for all those out there suffering from this type of allergy the books you have discovered shows that there are always alternatives if you go looking for them. Well done on both the puddings, and the scones cooking, errr, how much do you weigh now? Keep up the good work Tim
I too discovered cooking, though by a different route (a messy, ugly divorce). It's intellectually challenging and instantly rewarding. I wish I had more time for it, and these splendid books you mention. The availability of such material is definitely a major perk of living in a 'developed' nation.
